TOMATO-FETA SALAD
2 pts cherry tomatoes halved
1 sweet onion chopped
4 oz pkg crumbled feta cheese
2/3 cup oil
1/3 cup red wine vinegar
Optional; fresh oregano, basil, or chopped chives
Wisk together oil, vinegar and herbs. Pour over other ingredients Toss to coat
refrigerate before serving
FISH TACOS
Corn Tortillias
Frozen breaded fish
shredded cabbage
limes
sour cream mixed with taco seasoning
1. broil or fry fish
2. warm tortillas in a dry skillet
3. put everything in taco style on tortilla
HOMEMADE PRETZELS
2 cups warm water
1 TBS or pkt of yeast
1/3 cup brown sugar
5 cups flour
5 cups water
3 tsp baking soda
1 egg
kosher salt (optional)
1. Mix the 2 cups of warm water with yeast add brown sugar and flour. knead into a ball of dough. cut into 16 equal pieces.
2. in frying pan combine the 5 cups water and baking soda. mix and bring to boil.
3. after pretzel shape is made place in water bath for a few seconds. place on greased cookie sheet. brush egg over pretzel. sprinkle with salt. bake at 450 degrees for ten minutes
Chicken Ritz Casserole
15 oz chicken cooked and chunked
16 oz sour cream
1 can of cream of chicken soup
2 rolls ritz crackers
1/2 cup butter
mix chicken, soup and sour cream and pour into baking pan. crumble ritz crackers over chicken mixture. melt butter and pour over crackers. bake for 20 min at 350 degrees
EASY BREADSTICKS
1 TBSP yeast
1 cup warm water
1 tsp garlic salt
1 TBSP dried oregano
1 TBSP dried basil
1.5 tsp dried thyme
1 tsp sugar
1. combine water and yeast mix and set aside
2. combine dry ingredients
3. mix wet to the dry ingredients and knead for 1min
4. roll into balls and put in warm spot for 15min
5. place on a greased pan in breadstick shape
6. let rise for another 15 min
7. bake at 375 degrees for 12-15 min
PEANUT BUTTER BON BONS
on the stove melt
2 cups peanut butter and
2 cups butter
in another bowl combine
1 lb powder sugar
3 cups rice crispies
add peanut butter and butter to dry ingredients
mix and make into balls and refrigerate
optional dip into melted chocolate
KEY LIME PIE
12 oz lime yogurt (2 containers)
3 oz lime jello mix (small box)
80z whipped topping
1 graham cracker pie crust
1. mix together all ingredients except 1/3 of the whipped topping
2. spread filling in crust
3. put extra whip topping in ziploc bag cut a small corner off and squeeze out design onto the top of the pie
4. chill in the freezer
*can substitute and flavor combination of yogurt and jello mix
PASTA COMBO
8oz of spaghetti
1/2 cup of italian dressing
2 large tomatoes
1 chicken breast
1 cup grated parmesan cheese
1. cook spaghetti and drain
2.cook chicken breast
3. heat italian dressing over medium hear. pour over all ingredients
MINI PESTO PIZZA
2 roma tomatoes
1 pkg pizza crust
1/3 cup basil pesto
2 cups grated mozzarella cheese
1. preheat oven to 425 degrees
2. make pizza dough into small bite size pizza disks place on ungreased cookie sheet
3. spread 1 tsp pesto over each crust. sprinkle with mozzarella cheese.
4. top each pizza with a tomato slice. back 10-13 min
CHICKEN SQUARES
1 can of chicken
1 tube of crescent rolls
1 package of cream cheese
Put cream cheese in pot and begin to heat. drain the can of chicken and add to the cream cheese. melt down and stir to avoid burning. add milk if too thick. take the crescent rolls and put 2 triangles together to form a square. press the middle so it forms together. Put a scoop of cream cheese in the center and bring the corners to the center and press together to form a pocket. cook to the directions on crescent roll package. makes 4
